Printing in Word can be a real headache. Documents can have settings, sometimes inherited from a template, Word has settings, the printer driver can have settings, and the printer itself can have settings. I've never figured out any hierarchy. I generally try to make my choices in the printer Properties. Those seem to stay in effect in the current Word session until changed.
You can also install additional virtual printers in Windows that have different tray settings for the same physical printer.
