Right click on the Gantt chart and select Bar Styles. Change the references in Baseline bars to Baseline3. Or duplicate the Baseline bar style( cut and paste twice) and then edit one of the bars.

You'll also need to change which baseline variance is calculated against. Go to Tools > Options, Calculation tab. click the Earned Value button and select Baseline3.
