Default Graphing in Excel - one plot many columns/pick one column

I have a 10meg file with data on 10 separate tabs. Each tab or sheet has about 5-10 graphs.
Data is column 1: date, Column 2 through ….. is data (numbers)

Goal is to reduce the size and have a nicer way to graph. I can graph every combination and have hyperlinks to each one but that may take alot of time and a very large file. Would be over 50meg when done. I have data (dates, density, viscosity, weights, etc all vs dates on each sheet)

Would I would like to do is have a few columns with labels and have one graph. So if I selected one column (that would be the x , usually always date, and if I selected the other column that would be the y1 and y2 ). I was hoping to make a list of all columns from all tabs (sheets) then make label for each label in a pull down menu. So I would need the same data or labels (which would refer me to a set of data) for 3 columns. I will always be plotting date vs y or date vs. y1,y2. I see this a lot of times on the internet so I know it can be done.

So instead of having hundreds of graphs I could only have one interactive graph. I have use excel a lot and even have SPC graphs. But would be very nice to be able to plot anything quickly on one plot and to auto scale them. I know we did this years ago on Labview and worked great but all the data is already in Excel and would like to use #Excel for it. Our customer is using jump and mintab.
So all I want to do is pick or cliok onto a label which represents a column of data on a certain sheet then graph it vs another one all vs time (date). Then would be very nice to have buttons allowing me to change labels/scaling, etc..

Is this something Excel can do. I was considering looking into Labview again for this but wanted to keep it simple.

Some of the columns are blank and some have notes and data.
