An embedded object can only span a single page. For multiple pages, you will need to use one of the other link formats. As for the headings, that would require you to create separate links for the header & body of the Excel table and have either:
• a Word Table, with the Excel header on one row and the balance of the worksheet in the second row; or
• the Excel header in the Word page header and the balance of the worksheet in the body of the document.
