I have found a way that appears to work for others who might be interested.

1. Select a text.
2. Click on Review | Set Language.
3. In the dialog box, be sure the language you want is selected.
4. Check the box entitled "Do not check spelling or grammar."
5. Click OK.

So far, that seems to work. The setting does not affect the rest of the document which will continue to be checked.
