AutoCorrect is triggered by a space, or by adding punctuation; there isn't anything you can do about that. Word needs to know when to look for and insert an entry.
The application doesn't know if you are done, or if you plan to write a longer word (which shouldn't be converted into something else), until you press the space bar or add punctuation.
Of course, you can manually delete the space, if you don't want spaces.
