Is there a way to change the placeholder text "Choose an item" to something else without changing the color.

By default if I were to highlight the placeholder text and type over it, it would turn black. To fix that of course i can change that font color back to grey. However when I change the font back to grey, once and answer is selected, it remains grey as well.

Thoughts?
