Setting a deadline on the task forces it to have a date defined, and that doesn't allow me to move the project around.

This is what I did (See image: http://screencast.com/t/rbKr4tSutVL). I've set a subproject that lasts 60 days, and with a child milestone that is set to start on "As Late as Possible"
