Make sure that the "Detect language automatically" option is turned off in Review tab | Language | Set Proofing Language. In that same dialog box, you will have to change the default language, if it has been changed. Use the Set as Default button.

Note that if the problem is with a particular file, you may have no other choice than to select all the text in the document and manually set the language of the selection (use the Language dialog again, but this time, obviously, you shouldn't click the Set as Default button).
