Default Can I turn off keyboard shortcuts?

I am frustrated by the fact that, although I type quite fast, I tend to nudge other keys at the same time. My eyes are not what they were. In fact, none of me is what it what once was, but we don't need to go down that road.

The frustration is that as I type I suddenly find that some window has opened up or my cursor has shot to some other part of the page and the last sentence has come out in a different paragraph. The latter is by far the most annoying.

I have Googled this and I am certainly not alone in having the frustration: but the only answer I can find is that the Ctrl key must be stuck. Mine isn't. I just must be hitting it, or the Alt key at the wrong moment. I have found this and the shortcuts are listed under "Move through your document" but I can't see how to turn these off selectively: clearly, I don't want to turn them all off?

I guess this is an MS Word issue, as Outlook (I have Office 2007) uses Word as its editor? I'll Google some more meanwhile, but apart from the above, I have wasted 30 minutes before posting here. There again, my Googling skills are somewhat akin to my typing skills: not legendary.
