In a corporate environment, the daily backups should be able to show who created the document and at what point the 'ownership' changed. In Windows Explorer, right-clicking on a file and choosing Properties>Details will show you whose user account was used to create the file (unless the person you're having problems with changed the file's properties), but that tells you nothing about who did all the work.
