It seems to me that the interface you describe only works for the docproperties defined by Microsoft i.e. the product author.

I want to use Custom and amend Custom Fields in Word 2010.

For instance, when I use the "Edit Field" update dialogue for the "Title" field the interface offers me the opportunity to amend the field value, I cannot find the dialogue to amend a custom field.
