Question How to edit custom fields in Word 2010?

I have upgraded from Word 2007 to 2010. I have started a document using a template created in W2007 which has custom document properties. These have a custom name, a data type and and a value.

I can't find how to amend the content/value of these fields, nor can I find how to insert new custom fields.

If I use Edit Field dialogue I am not given the opportunity to change the field values.

The File Info Prepare document dialogue no longer seems to offer the custom property editor.

If I use the Insert - Quickparts - Insert Field, this now only offers me the ability to insert standard fields into the document

How can I create or amend editable custom fields in Word 2010 preferably without using Visual Basic.

A URL explaining how to do it would suffice.
