Default New to mail merge help please

I am trying to set up a mail merge whereby I have different addresses to mail to and I would like to be able to choose from different paragraphs to put into the main body of the letter, rather than just have a standard letter with only the name and address being different. Is this possible and how do I set this up. Thanks for any help
