AFAIK, that's the way Word works - by design (other users might be upset if cutting & pasting data did as you want).
If there's a consistent pattern to the shading (eg alternate rows green or yellow, or a number like 1 or 2 in a cell determines the shading for the cell or row), a simple macro could be used to go through the table after the updating has been done and re-apply the correct shading.
