The simple way to do it is open the Resource Usage view. You can then highlight and copy the left side and paste it into Excel. You can then highlight and copy the spreadsheet side and paste it into Excel. You will not get the column headers.

The more difficult way is to write a macro to export the data out.

I am using Project 2003. Maybe the newer versions have better tools.
