I have no idea why they choose the colors they do. You can change them in the Control Panel Display settings on your computer. I have my Outlook set so that all lettering is white and the background is black. It is so much easier to read for me.

Start > Control Panel > Display > Personalization > Window Color

You could also choose different themes which have preset colors you can use.
