That really depends on how you design your document.
If you have a Section break between chapters, you could unlink the headers for each Section and type the Chapter heading in the 'left' header.

Alternatively, whether or not you use a Section break between chapters, if you format the Chapter heading in a Style that isn't used for anything else, you could use a STYLEREF field in the header, pointing to the Chapter's Style.
