For issues 1 and 2, it sounds like you just need to change the folder where the accounts deliver mail:
1. Click on the File menu.
2. Click on Account Settings > Account Settings.
3. Under the email tab, you'll see a list of the email account. Select one, and then click the Change Folder button below the list.
4. Select the desired destination folder (in this case it would probably be the in the outlook data folder that has the pre-existing mail).
5. Repeat for each email account.
For issue 3:
1. Open the Address Book.
2. Click on the Tools menu.
3. Click Options.
4. In the drop-down "When opening the address book, show this address list first:", select the user's Contacts.
