According to this article: What is AutoSave? (microsoft.com)
We noticed that AutoSave appears in the upper-left corner, on the title bar, if you are an Microsoft 365 subscriber, and you have the latest versions of Excel, Word, and PowerPoint for Windows installed.
Considering that you are not using Microsoft 365 Apps for enterprise, I am afraid it is a default behaviour for Office 2021.
I understand your feelings and the inconvenience caused to you. However, I am sorry that I can’t find any other out of box suggestions to work around this question.
To address your concerns, I would suggest you send feedback with in Feedback · Community (microsoft.com)
Since it is the quickest route to get your comments to the related programming developers’ ears. They read customer feedback daily.
