Sorry, I should have noticed that.
You can still do this with the Mac.

The easy way is to get on a Windows version and construct your template, which will then work on the Mac.

Almost as easy is to find these document property content controls in an existing document and paste them into a document on the Mac. Lucjkily, there is one on my web site that can be used for this. Mac Content Controls Document - Experimental
You can copy and paste from that into your Mac document.

The third way is to actually construct mapped content controls programmatically. That is a completely different level. Start here: Content Controls for macOS by John Korchok
