It is related to the typeface (font). You are finding a character in one font and replacing with another character without also replacing the typeface which is necessary to see the 'hand holding a pen' character.

If your replace with also specifies the Format>Font required then your result would be what you expected.

I would do it a different way. If you insert the character and copy it to the clipboard (which you must have done to get it into the Replace with field), then use '^c' in the Replace with field. This will allow the find and replace to put in whatever you have in your clipboard.
