Default How to apply a style to a group of words inside a paragraph?

Hi all.
I some older versions of Word you could apply to a group of words inside a paragraph a style that was different from the paragraph itself. It was very handy when you make quotes in a different language. I write in French so the styles of the body have the French language attached. I had created styles with the same specs but with English language. So when I made quotes the spell checker would apply the right language.

Is this still possible? I didn't find how.
Of course the alternate trick is to go to Tools>Language... and choose English but it's not as handy.
