OK, try to avoid floating boxes as much as possible. If you use a two column table with no borders you can achieve the same layout without the complication of floating objects.

If you stick with floating objects, look at where the anchors for each floating object are located. I would expect the caption numbers to reflect the position of the anchor.

Use the Review tab (or whatever it is called in German) to review your tracked revisions or "Accept all changes" Then update the fields again.

You can also toggle the field codes to see how they are coded. On Windows you can do this by right clicking on a field and choosing it but you can also select is and press Shift-F9. I don't know the equivalent on a Mac but it is likely to be similar.
