Interesting that you say that. One of the Web docs I read said Not to do this, go manual instead, as using the menu can cause the page number to end up in a frame and create number of problems down the road. In fact they stated:

I JUST TRIED IT USING THE MENU as you suggested.
I took the document, exposed the Header/Footer then inserted both PAGE and PAGE NUMBER and the fields did show up in the Footer.

In File > Page Setup > Area From Edge > Header/Footer boxes determine if the Printer can print what appears in the Header/Footer area.
If these values are to small for the Printer to Print, Print preview Correctly shows Nothing in the Header / Footer area.
One must increase these numbers.
I have yet to figure out this "Area From Edge" relationship as it relates to Margin Settings.
For example, if one sets the Footer value in "Area From Edge" greater than the bottom margin, what happens?
