You will have to customize the aspects of the Table Text style that you want to be different from the specified defaults.
The difficult part with text formatting in tables is that it is affected by several different sources (the table style itself, the Normal style, custom paragraph styles, the document defaults). This is a confusing design choice made by the Word developers.

I'm looking at your modified version. In my original document only the font size was a problem. Now, in your modified version, the font size and the font itself are not as defined in the Table Text style.
So I understood that all those settings need to somehow fit to each other, but when I change the Normal style, the document default and the my custom Table Text style to be the same, it is still not working.
So if you have a instruction based on the file I shared how I can get Calibri 11pts to work with the "Table Text" custom style, that would be great.
