The style is already defined how I want it to be (Calibri + 11pts), but when I apply that style, it's Times New Roman with 10pts. So I don't want to modify it.
But if I modify it to e.g. font size 9, it applies font size 9, but the font is still Times New Roman.
Is that different for you when you open the document?

Just to be clear, are you looking at your original document or my modified version?
I am aware that the font name is not what you want,
in my modified version. That is a side-effect of my setting the document defaults and the Normal style to match each other.
You will have to customize the aspects of the Table Text style that you want to be different from the specified defaults.
The difficult part with text formatting in tables is that it is affected by several different sources (the table style itself, the Normal style, custom paragraph styles, the document defaults). This is a confusing design choice made by the Word developers.
