Step 2 is where the issue occurs:
If you review my original post you will see that I posted the server settings from my email client (Outlook) and they match what you have posted.
The main issue is that I never get to the screen where I can enter the full name, full email address, password, etc. because I get stopped by the error message which reads: "We couldn't connect to the incoming (IMAP) server using the specified encryption method."
Since I can't get past that message, I can not go any further.
