Default Before uninstalling microsoft office what precautions should be taken

More to the point, I want to uninstall Microsoft Office Professional Plus 2013 and reinstall Microsoft Office Professional Plus 2013. Before doing so I am collecting information on my PC that is relevant to Excel, Word, Outlook etcetera such as templates and add-ins that are new to the original installation so that I do not lose this coveted information.
Thus far I have discovered locations for the files and folders I want to copy off before uninstalling Microsoft Office Professional Plus 2013. These include the following which I have chronicled in a word doc:

1) ADD-INS
a) Excel: C:\Users\Username\AppData\Roaming\Microsoft\AddIns
b) Excel: C:\Users\Username\AppData\Local\Programs\Kutools for Excel…KTELoader64.dll
c) Excel: C:\Users\Username\AppData\Local\Programs\Kutools for Excel…KTEHelper64.dll

I am fairly certain I am probably unaware of all that I need to copy off.
Does anyone have a protocol to follow to do this correctly so that I can discover if there are additional files and/or folders I need to be concerned about?
