What is on the Home Tab is a gallery of Quick Styles. Most styles are not quick styles.

I have followed the instructions on how to create a Style (not a Style Set, though I still don't know what the difference is, style sets don't seem to be mentioned in the manual), but still can't find the new Style I've created. I have given it a title, but it's not listed amongst the Styles under the Home tab. Where will it be saved to? In the instruction manual, under Applying Styles, all it states is "Once you know how to find a given style, applying it is simple." But it doesn't actually state how to find the given style.
