As to predefined page number building blocks (which I consider eye candy and mostly useless), see Page numbering /header / footer problems Word 2007 - 2019 (365).

Page numbers are simple fields which you can insert by going into a header or footer and pressing Shift+Alt+P. They are also available under Quick Parts > Fields.
