What you are describing shouldn't happen; that is, formatting shouldn't disappear for no apparent reason. Once set up with styles, formatting is generally stable in Word. For numbered and bulleted lists, specifically, setting up the numbering with styles, as has been suggested earlier in this thread, should prevent formatting from being lost.
