Default Opening XML files

When I try to open .XML files that I have downloaded and saved on my computer from a website that uses .XML "forms" to collect information, I only get the coding underlying the form - it does not appear as a worksheet in columns and rows. How can I fix this so that I can open, save and work with .XML files - they have to be .XML or else I cannot import/upload the completed form to the website where I exported it from.
This only started happening since I upgraded to the latest version of Office and Excel, called MS Office Home and Student 2019.
Please help!
