1. You cannot turn these tags off. I understand why you want to. It is very easy to get lost and confused with headers and footers in multi-section documents. (It is a next-page Section break.) Each section of a Word document has three headers and three footers. In sections after the first, each of these can independently be linked to the previous section, or not.

2. Yes, Word has changed.
3. You can use Word 2007 or 2003 in Windows 10. The use of these is not supported by Microsoft but they do run. Word 2003 documents are less stable and more prone to corruption. In my opinion, Word 2007 is the worst of the ribbon versions and from a use standpoint was far inferior to Word 2003.
