To open the header and footer, double-click in the margin space at the top of the page. Thanks Ulo. My problem is not in configuring my page as landscape or with headers/footers. It is using headers/footers when using columns. At what point do you instruct the layout that you want 5 columns. The header just doesn't want to be centred in a column...
