Uhm, you might want to change your profile which indicates you are using Windows 7.

The Mac and Windows versions are different programs with the same name and similar features. Do you have the latest edition of Word? It is only the latest versions (16.15+ I believe) on the Mac that allows editing the QAT. If you go into the Edit the Quick Access Toolbar dialog you should be able to find the commands under the Home Tab. You need to use the drop-down to change the area from which to choose commands. It should also be under "All Commands."
