The way cross-references actually work is that Word adds a hidden bookmark around the source text and then adds a cross-reference to that bookmark.

You can do the same by first adding a bookmark around the field that is associated with the exhibit (give it a bookmark name that reflects the exhibit name, not the current number). Then you go to the usual Insert Cross-Reference dialog and choose the bookmark.

Note that you MAY need to update the fields twice if the first update does the cross-ref before the seq field has been updated.
