I did that "Different First Page" thing and that doesnt do anything except not show the page 1 number and just start with #2 as usual on the right side, whether I have an empty page to start or not. In other words, the page number on the right on the first 2-page page is still #2 no matter what...
I need to change that to #1 just like in real books, not sure why this is so hard, its weird.... why would it be wrong by default?

You are trying to print two logical pages per one printed page? That is handled in the Print menu.
You can insert a next-page section break at the beginning of your document and restart page numbering at 1 for the new section. In the first section (the blank page) go into the header or footer and select " Different First Page" to eliminate the page number.
For pdf, I find that I get the best appearance doing this by formatting my original document as being legal size rather than letter size. The pdf prints on letter-size paper. Otherwise, I get very large top/bottom margins.
