The dropdown options take a fairly simplistic approach and assume they're all you want. So, if you want both the SaveDate and Page X of Y numbering, you'd need to insert the latter first if you're going to use the dropdown.

Whilst in the footer, click on the 'Home' tab, then choose Paragraph > Indents & Spacing > Tabs. Insert a suitable value in the 'Tab Stop Position', clcik on the 'Right' alignment, then Set > OK.

Attached is a demo document, with a Table of Contents, various paragraph Styles, and a footer along the lines of your description - with the page numbering starting from 1 on the second physical page (so that the 'front matter' page(s) are not included).
