Default Project Professional 2016 Constantly Freezes During Class

Hello all,
I teach MS Project at a local community college. About 4-5 years ago, they moved away from having the app installed directly on the computers and they now have Project (along with the MS Office suite) installed on virtual machines that instructors and students can access at various campuses.

This "solution" has led to many issues during class. The Project app will freeze on the students' workstations multiple times throughout the class. Sometimes, it's when the students are attempting to open or save a file. Sometime, they might be attempting some other action. Last week during class, we had the app freeze on various computers no less than 15 times.

We are currently using Project Pro 2016, but we had the same issue with Project Pro 2013 when we previously had it installed on the virtual machines. I have complained and begged for 4-5 years now and the problem still exists. Prior to utilizing VMs, the college actually installed the software on the machine and we had no issues. I have been asking them to go back to this practice, but I've consistently hit a wall.

In addition, the practice files we use during class are located on a shared drive. They also used to be installed directly on the workstations. I have no idea if this is also contributing to the problem.

At this point I'm at wit's end and I'm reaching out to you folks (in other words, I'm doing the job the college's IT department should have done years ago). Does anyone have experience with attempting to run MS Project on virtual machines? If so, can you share some suggestions?
