If Word is applying styles by itself, clear the option that says "Define styles based on your formatting" on the AutoFormat As You Type tab of the AutoCorrect dialog box.

I haven't used Word 2000 in years, but I believe you access the AutoCorrect dialog via Tools | AutoCorrect Options.
