It's called justification. On the Home tab, in the paragraph menu, there are groups of lines representing text alignment. The one with the lines going straight across is justified text. If you're doing it a lot in a document, it's good to define a style with justification as part of the style definition (you'll see a similar paragraph menu in the style definition menu).
