The first chart is easily done with a pivot table. First of all, I organized your data so each shift has its own column. Now go to the Pivot tab. The chart shows the total for each shift for a specific period that you choose from the timeline below the chart.

Currently, it is set to select for days. You can select any period of consecutive days. Select your start date then, while holding the shift key, select your end date.

You can also select by months, quarters, and years.

Is this all you need?

(P.S. I just noticed all your dates in your data table are for 2016.)
