This is a bit of a mystery.

In spite of what you have found, you may still want to clear the "Detect language automatically" option in the Language dialog box (Review | Language | Set Proofing Language), if you haven't already done so.

Note that the language preferences are different from the language applied to text. In Word, language is formatting, just like italics or bold, and it may apply to an individual text range (even to a single character).
