I would suggest that you make 3 new tasks (call them part 1, part 2, part 3 if you like) and assign work to these as 40 hrs, 20 hrs and 40 hrs (see pic below) and add a resource.
Then set each task to "Fixed Work" (double click on the task and see pic for the pop up box). You can then set the duration to 1 wk at the beginning and end, and 80 days to the mid section (as pic) to give a duration of 100 days. This will give the effect you want.

I asume that this is a task that carried through, if it a weeks work then a gap, more work, gap, and a final weeks work, please let us know as this has an easier solution.
