Default Outlook/Excel interface

I am trying to establish the ability to send out an email (policy/directive) to several hundred people and have it recorded in an Excel matrix (individual's names/document name)
I know about the tracking option to shows that the email was opened -- But I want to have an at-a-glance management tool to avoid having track all the receipt emails.
