How to control the page numbering in a Word document
Page Numbers in Word 2007-2013

You will want to have the top of each transcription page formatted for page break before (paragraph formatting).

You will want different even and odd footers. One will have a calculated page number and the other will have no page number.

Note that calculated page numbers do not work in tables of contents or cross-references.
