I change the option to update fields when printing. There may be another way, but I do not know it. Fill-in fields work well in Word 2016 but see below.

I've stopped using fill-in fields for the most part. I find them annoying. I do use them with mail merge but that is about it. Much better, in my opinion, are content controls or MacroButton Field Prompts. See MacroButton Prompt Add-In. Content Controls will not work if the document is to be used in non-ribbon versions of Word. Macrobutton prompts work at least as far back as Word 97 and function well in Word 2016.
