I believe I have set things up properly so that Word will display so-called "readability statistics". However, the statistics do not appear on finishing a spelling / grammar check. Any suggestions appreciated.

If nothing is showing, that suggests you haven't checked the 'Show readability statistics' option, under File|Options|Proofing>When correcting spelling & grammar. If you do have the option checked, it's possible the Office installation is faulty, in which case you might try repairing it (via Windows Control Panel > Programs > Programs & Features > Microsoft Office (version) > Change > Repair).

In the latest versions of Word, the following macro gives readibility statistics, and not the spelling dialog. They may fix it, though.

Code:
SpellCheckDisplayClassicSpellCheckDialog()
'Macro created by Stefan Blom, MVP, September 2018

'
' broken by Microsoft - now displays readibility statistics October 2018
    On Error Resume Next
    Dialogs(wdDialogToolsSpellingAndGrammar).Show
End Sub
