What kind of formatting is this gray highlighting?
While using easybib.com for some schoolwork, I noticed that every time I copied and pasted from their website, I was left with an extremely stubborn gray highlight on the text. I did figure out that using the "merge formatting" paste option is an effective way to remove it, but I can't for the life of me figure out where the option is in word that controls it. It is text shading. You can also remove it using Ctrl+Spacebar on selected text.

Okay, I know why I was unable to find this before. I'm experiencing an odd issue where if I highlight a line break (for example, the break between two paragraphs), the shading menu says "no color" and I am unable to remove the shading. I can change the color, but it ends up just applying shading that's slightly taller behind the shading. Is individual character shading somehow different than line shading? If so, that's pretty poor design. If I had several lines of this stuff I'd have to individually highlight each line to remove it. Ctrl+spacebar is not a good solution since it removes other types of formatting as well. I'm using Word 2013 for reference.

The shading must be copied across from the source so you can either remove all formatting or just one attribute.
Note that shading can be applied at the text, paragraph, table cell or document level. If you want to get rid of shading specifically, pay attention to the 'Apply to' drop down in Charles' screen capture. The elements available in that list depend on what is selected when you open that dialog.
